(Preheat the oven to 375 F)
In a large bowl combine the peanut butter, sugars, unsalted butter, and salt. Mix together until well combined. Add egg and vanilla and mix until well distributed. Next add the flour and baking soda and mix until combined. Scoop out the dough and roll it into 1 inch balls. You can coat it in granulated sugar if you would like. Place each ball on a baking sheet 2 inches apart. Bake the cookies for 8-10 minutes or until cookies look puffy and the bottoms barely start to turn brown. Once done baking, immediately place the unwrapped Hershey kisses in the middle of the cookie and lastly enjoy!
